Meat is overcooked

Check menu set point temperatures and cook time on the controller.
Change cook time to lower setting only after performing a beef integrity test for that product.

Thoroughly scrape and squeegee accumulated pieces of food off the lower grill plate (for grills without lower release sheets only).
Clean upper release sheet with squeegee and wet sanitized grill cloth. Wipe down the release sheet four times in an hour during busy times.

If the lower grill plate has stuck pieces of food, use the squeegee to clean the grill surface and then wipe down with a wet, sanitized grill cloth.
